The Gallery Restaurant at the Westbury offers food which is reminiscent of the South of France, The French Riviera and Northern Italy with a large focus on sublime ingredients prepared in an uncomplicated manner. Brian's Italian background, in addition to the years he spent at Claridge's Hotel gave him an incomparable knowledge of Italian and French food.
Brian Fantoni delivers an opening menu, focusing on the best quality ingredients sourced from producers in the UK and specialist ingredients from France and Italy. The menu includes Brandade de Morue salt-cod beaten with garlic and olive oil, served with country bread. Brian's signature dish is ravioli of langoustine with fennel and tomato confit, and desserts such as Valhrona chocolate parfait with golden raisin puree make the menu mouth-wateringly attractive.
